3 green apples thinly sliced (skin left on)
½ cup filtered water
1 tablespoon ground linseed
1 teaspoon organic ground cinnamon
2 teaspoons coconut yoghurt
Place sliced apples, cinnamon and water into a saucepan, bring to the boil and turn down to a gentle simmer for approximately 15 minutes or until the apples are cooked. Turn the heat off and stir through the linseed. Place into a serving bowl and add the coconut yoghurt.
If you are having this for breakfast be sure to balance it with some protein and low glycemic value carbohydrate. I often have mine along with a boiled egg and a slice of sprouted grain toast with coconut butter.
