Basil & Cashew Pesto


100g cashews

35g fresh basil

25g pine nuts

35g cold pressed olive oil

1-2 tbs lemon juice

ΒΌ tsp Himalayan rock salt


Blend all ingredients thoroughly. You may need to add a little water if you want a thinner consistency. Serve with vegetable sticks or allowable crackers.

You can grind the cashews and pine nuts in the large Nutri-Bullet container then add the other ingredients and blend thoroughly (again you may need a little water to make the consistency a little thinner).
